Zucchini Casserole (And a couple other things with Zucchini)

For Zucchini casserole -- peel and chop up 1-2 medium zucchini and place in 9x13 pan. Put a layer of chunked chicken on top then top with cream of chicken soup. Prepare a box of Stove Top stuffing (follow the directions on the box) and then spread it over the top (My kids love the stuffing so sometimes I will use two boxes of Stove Top.) Bake for about 40 minutes at 350.
Sister C. Dickson told me she loves grilled zucchini - She cuts the zucchini into long spears and brushes them with Italian Dressing and then grills them. We tried it the other day and it was great!
You can also crack an egg and dip the zucchini in it then dip it in in flour with some salt & pepper (add other spices if desired) and just fry it. (Or you can use breadcrumbs too.)

Indoor S'mores

I love this recipe and am constantly being asked to make it for parties, picnics, and any other excuse to gather around with family, friends, and food! It is super easy and takes less than 10 minutes to make, which is good because that's usually how long it takes to eat before it's all gone. It is so yummy!

Indoor S'mores

2 Tablespoons Butter
3/4 cup lite corn syrup
1 pkg (11.5 oz) milk chocolate chips
9 cups Golden Grahams Cereal
3 cups miniature marshmallows

In medium saucepan melt butter on medium heat. Add corn syrup and chocolate chips. Heat until chocolate is well melted and smooth. Using a large spoon, slowly pour chocolate mixture over cereal in a large bowl until cereal is evenly covered by chocolate. Stir in marshmallows 1 cup at a time until even mixed. Enjoy S'mores without the campfire!
